I fell off the band wagon tonight. I was craving something sweet SO BADLY and wanted a comfort food. I had found a recipe for gluten free vegan peanut butter cookies, and I could eat it as long as I subbed almond butter. I'm bringing these Sunday for lunch with my friend and I "had" to make sure they were ok so I don't embarass myself. Therefore I decided to make them tonight.
Unfortunately, I lack self control sometimes...maybe b/c I have to have such strict self control the rest of the time? Idk. I'm 3 days into my 5 day diet but I know that technically my gut healed itself within the first day, I just have to keep out foods that are inflammatory for the 5 days to really help it. So therefore, I justified that eating the sugar and nuts (almond butter) in these cookies would be ok.
Let me be reminded why I do NOT want to do this again...
I'm jittery.
My stomach is bloating.
My wrist muscles feel like they are moving slow-mo through molasses.
I can feel my muscles ache - like I've run a race, the adrenaline is coursing through my thigh muscles.
My chest feels heavy and achy.
My spit is thick.
I do NOT feel well.
And then after I ate my fair share of dough and cookie, I thought,...was this REALLY worth it if I get lupus? HECK NO!
Wow. So will need to learn to control sugar cravings. I fell off the wagon tonight and am reminded that sugar isn't all it's cracked up to be. Nor is giving into food outside my diet. Not to feel how I do now, and not to weaken my body more towards an autoimmune disease. So not worth it.
Just not sure how to maintain that strong self control to not fail again :(

When it rains, it pours
Just had my nutritionist over. When it rains, it pours. The last of my blood tests came back today, and I'm autoimmune...
So the good news is that I paid $800 to get these two blood tests and they have been totally worth it. I know my body cross reacts to avocados, kiwis, bananas, etc, thinking it's gluten. So I know more triggers. That's super helpful.
Now I know I'm auto-immune. The good part of this is that it was caught early. MD's don't catch autoimmune issues until it's too late to go back - ie, Rheumatoid Arthritis, lupus, diabetes, etc. There are so many diseases out there that are constant painful reminders to people that they are autoimmune. So the good news is that I'm not at that point. I'm at the point where I know it, I have to watch my life and food and stressors so that I don't get to that point, but it's manageable.
Again, I only retain like 10% of what the nutritionist tells me. So here is my feeble attempt to regurgitate what she said... 1) my body is too weak today to be cleared. Odd, but not unusual. I kept my last clearance ,which is a big deal. It's a very positive thing that I keep my clearings and don't lose them. My nutritionist loses her clearings monthly. So the fact that I'm keeping mine is a good thing. 2) My autoimmune results came back with three things on them. While they are tough enough to deal with, they are not the ones that hit my nerves, or my collagen, or are things that keep me in constant pain. So I'm thankful for that.
These first two areas are less serious - but still serious - than the last one. First is the Parietal Cell and ATPase. That means that when I get stress in my life, or walk into a heavy-chemical area, or eat the wrong foods - anything that messes up my now-sensitive immune system that is already deregulated, it will derail easily again. This area means it hits my stomach (as we already know). Gives me leaky gut, makes me bloat, means I won't digest food as easily, will give me stomach issues.
The second area is Tropomyosin. My nutritionist was a little fuzzy on this one, and is going to get more info. It affects the proteins in my muscles, which means that when any of the above-mentioned things happen, my muscles will hurt. WELL, this is very true - since I had the hand and feet cramping, and since my wrists were in a lot of pain and the workman's comp doctors couldn't figure out why I was still having pain. So this validates me and what I've been feeling. So that's the silver lining.
The third area is the hardest and most serious. It's called Platelet Glycoprotein. This was the highest out of range and if I have any of the above triggers, it will affect me in the autoimmune, cardiovascular or lupus areas... So basically that means, if I don't regulate and monitor my diet, i could get lupus.
Technically I'm "at risk" of getting any autoimmune disorder b/c my immune system is weak. I can support my immune system by eating the right foods, but I can't "go back". My body has the anti-bodies in it now, and will always be fighting itself, which causes inflammation. That's why it's important to eat non-inflammatory foods.
But this means that since I'm auto-immune, I have to be very careful to maintain variety in my diet so I don't develop more sensitivities. Ie, I can't have green tea every morning. Has to be every three mornings. I have to keep major variety. The good news is that if I can handle green tea fine every morning, and then one morning I'm like whooooa that green tea didn't sit well! Then I just take it out, let my body calm down and try again next week. If the next day I start to notice other foods not sitting well, that I should be able to eat, then I opened up my leaky gut again, have to do this repairvite diet again, and get myself back on track.
My nutritionist said that I will constantly be working with my body. Embrace the hiccups along the way. If I let myself stress out about them it will make them worse. I will have hiccups, but I'm being given tools how to get through them. So at least that's good to know.
She said that at least I have all this data so if I get to be pregnant one day, I'll know how to best handle it. It'll be imperative to be stress free for the 9 months and then be careful about what I feed the baby. I won't worry about that now, but am tucking in the back of my head.
She also said that it's going to be very important to be stress free. In general in life, that's important. Same with the way I'm eating; ultimately that's the best way to eat - foods that don't inflame a person's body. As organic as possible. that's great. stress free is great - then I'm not getting cortisol into my system which can cause so many issues. Ultimately this is good...I have to remind myself of that.
But I think I grieve that my big dream in life right now is to get involved physically fighting human trafficking. But how can I do that when I can't be stressed? I love adrenaline. I LIVE for adrenaline. Can I do that without being stressed?
I realize I'm not leaving room for God to step in and work miracles and bring healing. This is my knee-jerk reaction to what the nutritionist said. I'll be processing awhile. At least I have the tests, I'm gathering data, and am armed with knowledge. I feel like she's on to something, and my body responds how she said it will...
But quite frankly, this sucks. It's life long. I will constantly be thinking about foods, about how to eat, what to have. It consumes me so much right now that I'm sick of it. I'm sure I'll get to a point where I'l figure this out so much more. But it might be another year until I'm comfortable cooking for others and am not overwhelmed with the idea of going to the grocery store. I think this sucks too just because I'm already disappointed with nothing to do on my birthday, and feeling lonely. Guess it's a great time for God to step in :)
And...to end on a positive note...she said I can have my unsweetened coconut with agave nectar on my birthday... Wonder if I can put a candle on it?? ;)

Pity Party
I'm just going to be honest and say I'm having a pity party for myself right now. Tomorrow is the day before my birthday, and at work, our team brings in food for the birthday person's day. It's made into a big deal. However, I won't get that tomorrow b/c there is nothing to eat. My boss emailed me and said he wanted to get me Starbucks for our team meeting tomorrow but wasn't sure what I could eat. I said he could bring me a lemon for hot water... :-/ Just doesn't cut it.
Plus, it's my BIRTHDAY Saturday. I should be able to eat something exciting. If I can't have cake, I should be able to have something I want. Nothing sounds appealing. I kinda feel like this birthday is being set up to be a total dud. No plans with anyone, and nothing fun to eat.
Then, let's just mention Easter... Technically, well I'm kinda cheating by eating more food on Easter lunch, but since I have a friend who wants to do lunch with me after church, I'm going to allow myself some grains, tea, nuts and sugar. But really, still, that food isn't all that exciting. I'm pretty sad. Such a special weekend and I'm not able to partake with food. I know I'm whining, I really do. But that's how I feel right now.
It's amazing to me how much our culture uses food to show love and affection and hospitality. How food is central and integral to any social gathering. My office is having a potluck tomorrow too. So I'll smell everything delicious tomorrow and not be able to eat anything.
This just really really sucks. I'm sure God is teaching me a lot of things through this. Maybe there is some analogy too...like how man does not live on bread alone but on every word that comes from the mouth of the Lord... maybe God is using this challenge in my life to encourage others. I have no idea. And I know it could be so much worse. I've lost my love for cooking :( I'm sure it'll come back at some point. I'm tired of hearing myself talk about food all the time and what I can/can't eat. I'm tired of focusing on what I can eat next. Because I might get hungry and I need to make sure something is at least cooked so I can eat it. But when you're hungry, who really wants to go have a snack of seaweed noodles? Yah. No...
Ok that's where I'm at. It'll get better. But I'm being real and right now it sucks.

Cacao Nibs
So I have to say, Day 1 of the "one week repair diet" has been interesting. Fantastic b/c it's the first time in 2 1/2 weeks that I can remember my stomach NOT bloating and gassing up...so I'm encouraged by that! However, I have craved every sort of food non stop. Nothing I can have. Cheetos, Chocolate, nuts, scones, eggs, everything.
So I went to Vitamin Cottage today to get sausage and sea weed noodles. I saw these cacao nibs on my way out, and cacao was the only ingredient. It advertised itself as a super food. I texted my nutritionist to see if I could have it...and bought them anyways. I'm thinking, hey, great way to get a little sugar/chocolate fix, and I'm sensitive to cocoa butter but cacao nibs don't have that.
Yah. Well. Cacao nibs don't have NOTHING good!! I was SO disappointed!!! They are bitter and chalky and nasty. No wonder chocolatiers add sugar!!! What is advertised as a super food is super gross!! Of course the bag was a little pricey so I feel compelled to use it up. Have no idea how. LOL probably my taste buds will eventually change and I'll like them but they are nasssstyyyy...sigh.
However, I went to Sprouts to try to branch myself out on different fish...got some wild caught salmon, and the guy recommended the wild caught bass...and then told me how to prepare it! So I'm excited to try it :) We'll see...
I'm definitely in food craving mode. Would really love to go for a bag of sweet potato chips right now....Yup... :) oh well
I went to happy hour with my cousin tonight. She looked in my purse and saw I had hidden a lemon in it. She laughed and was like WHAT is this!? I told her, well, if I can't have any of the teas here, I need something to drink with my hot water ;) I think she thought I was a nerd...but thankfully there was peppermint tea with only peppermint as an ingredient - no artificial "natural flavors."
Anyways...part of the journey... :)

Back to the one week diet
I just saw my nutritionist and mentioned I really think I'm having trouble with nuts. She tested me and said I shouldn't be unless nuts have gotten into my blood - making it an immune reaction, i.e., I'd have to get off of them for 5 or 6 months and then try them again. As she went through clearing me for fishes, she decided that I shouldn't have having these issues (I've had major bloating and gas the past couple days too).
Sooo she told me to go back to the repairvite diet...my original first week of the 4 week diet. Taking the herbal supplement shake in addition with the vitamin shake that I'm now taking.
I'm kinda discouraged. She thinks I could have leaky gut again, but her explanation makes sense. I've been reintroducing foods, and was eating foods that my body was cross-reacting to (ie, my body was treating avocados like gluten) so that was causing inflammation in my body as it flared up again.
So for the past 2 1/2 weeks I've had stomach issues. Each time I thought it was b/c - oh, I ate almond flour, oh, I ate too many brussels sprouts, etc...but I'm kinda looking forward to going back to a non inflammatory food diet. Other than eating that way. But how I'll feel, i'm looking forward to that.
So no grains, nuts, sugars, beans, and few fruits for the next 5 days. If I time it just right, I'll be able to still have Easter lunch with my friend and not be completely like a rabbit. Sigh. It'll be ok. Always something new. Eventually this will be worked out.
Plus, as the nutritionist pointed out, I want to be able to have nuts in my diet when I go to Moldova in 2 months...I'll need that protein source. Tho, I know God can provide nourishment in other ways if that food is taken out... just from a human standpoint, it'll be more challenging. 'Course, God likes challenges...gives Him more of an opportunity to shine through :)

Buckwheat...
I pulled myself up by my bootstraps...and tripped. Apparently I can have buckwheat, which doesn't have any wheat in it at all. Go figure. So I bought some at the grocery store and this fine Sunday afternoon I decided it'd be a great time to experiment trying to make something - ANYTHING - with buckwheat. Who knew how hard it would be to find a recipe without gluten, dairy, oats, any other type of flour, or eggs... Right. So, finally stumbled upon a pancake recipe...in place of the eggs, I made "flax eggs"...instead of baking powder I used baking soda...left out the vanilla...but everything else, including the coconut milk, went straight in. Batter looked great, nice and fluffy. Poured me some coconut oil into the pan, heated it up, and thought I'd make a pancake! Got pretty excited about this...

Okay um, maybe looking burnt but this is maybe just what buckwheat looks like when it's cooked right? Spread on some agave nectar and got very excited for this...
You ever been in one of those smoky lounges? Dark, seedy looking place from the 70's? Ok me neither but I've been in hotel rooms that smell like smoke and plenty of other places that just reek of cigarette smoke. Try making that smell a taste.Remember when you played in the dirt as a kid, and thought it'd be fun to taste your mud creation? Sure. Add that to the smokey taste.
On top of that, imagine really fine potato mush, all granular and gritty and blah tasting.
Sure, combine all those tastes and textures, and that was what my buckwheat pancake tasted like!!!!!!
I tried several bites. Figured maybe I'd gotten the first taste wrong. Maybe it needed MORE agave to mask the terrible taste. Maybe I just unknowingly burnt the first one! So I made three tiny more pancakes.
Hate to say it, but this past hour has been a total and complete epic failure. I really want pancakes now. And I'm throwing out all of these and the rest of the batter. And brushing my teeth because I have the nastiest taste EVER in my mouth!
So long, buckwheat. Guess I'm just down to quinoa for a grain...

Well...well...well...
Ok, so. I lost my first clearing :-/ I got cleared for nuts but that included seeds. I put chia seeds in my smoothie the next morning, took a gulp, and was like craaap there went that clearing! So yes. The past few days have not been fun for my stomach.
And apparently I misread my chart and thought I could have pork, so the prosciutto wrapped asparagus I made last night didn't help my stomach. At all. Nor the nuts I had through out the day. Sigh. I'm jacked up.
So, basically, my nutritionist is awesome, and went through everything on the list (tired arm from muscle testing!!!) and now I have a full list of what I'm currently reacting to. These are things that most likely should be able to be cleared...but I can't do right now. And I can only clear one grouping every 24 hours (ie, beans, meat mix, vegetables, etc)... ready??
Calcium, milk, cheese, yogur, whey, casein, geopathic sressors, zinc, sex hormones (estrogen, etc), adrenal hormones, DNA, peanuts (apparently there is a fungus that grows on peanuts that a lot of people react to), animal and vegetable fats, fish, beans, meat, food additives, baking poweder, gelatin, onion mix, starch complex, coco butter, sulfites, rice wine, perfume, flower mix, dog, feathers, formaldehyde, antibiotics that start with E-O, terracycline, fungus, grapeweed oil, strawberry, apples grapes.
Then, I got my cross reactive test back. So things that my body thinks are actually something else, are jacking me up. So that means for the nex 5 months I have to avoid: Millet, Hemp, Teff, Egg (NO MORE SCONES!!), potato,Tapioca, Oas, Milk, rice, sorghum, corn, teff, avocado, banana, chestnut, kiwi, tapioca.
Forever, I have to avoid dairy, gluten, oats.
I'm still waiting on one more test result but doc thinks I'm auto-immune...which came about from eating gluten, which I'm allergic to, for so long. The way they make glutenous items has changed in the last 10 years, and has doubled the amount of gluten in our food, and changed the make up, etc, which is why so many people are now reacting to it. It takes the body awhile to develop antibodies and try to fight it off...
I did find out too that if someday I get preggo, I will pass on my blood allergies to the baby. It will be born allergic to gluten and oats and dairy...good to know...and I have to maintain a low stress lifestyle.
that's the kicker. Low stress lifestyle.
Ultimately all these changes are going to be good for me. I don't like how I've felt crummy the past 10 days as I've found things my body hates. I'm in shock so don't even wnat to think about grocery shopping this weekend but I' mpretty sure I'll have a meltdown.
Anyways. I have to go meet a friend for tea...hopefully I can have it...

It's All Laughable
Tuesday is Nutritionist Day - yay! I always find it so insightful.
So this week has been hard and I told Mom I was so over having allergies. It takes way too much energy and mental exertion to figure out a grocery list and a meal plan, WEEKLY. Anyways...
So someone sent me a link for a gluten, sugar and dairy free site. Awesome! They had a recipe from the NY Times for Ceviche on there...and most of the ingredients were already on hand and I had to use them up anyways. So I made ceviche. I was paranoid I was going to give myself food poisoning tho...raw fish, cooked in lime juice for 30 minutes? Really?! Yah, really. It was great.
So great that I ate it for lunch...Had a late lunch...and then instantly started bloating and getting gassy. I mean, this was the kind of bloating that I was counting down the seconds until I could leave work. I wanted to suck my stomach in when I walked by anyone, and wished for a coat to hide the fact that it looked like I was having quintuplets!!
So thanfully my nutritionist came over today and we tested. I was very much sensitive to the cod I had. Like, no doubt whatsoever. Whoops. So now the dilemma is what do I do with the last serving of ceviche in my fridge :( I guess throw it out :(
And I'd been noticing I bloat and feel crappy when I eat cashews. And wondered about the almond flour. We tested and yup, I have a sensitivity to it. I think I'll be able to clear it - we're going to try to do two clearings a week now instead of one, which will clear things quicker. But my stomach has been enraged for the last 5 days or so, as I've eaten one thing after the other that I shouldn't have.
Amazing how much I can tell a difference tho!
So today, we had to eliminate (until I can get them cleared, I think...) beans, cod, halibut, shrimp and scallops.
I thought I was allergic to chocolate but she tested and it's actually cocoa butter...ok, that's not so bad.
And the reason I'm off of dairy is b/c it's similar to gluten...so not only inflammatory but my body will treat it the same way and fight it.
She doesn't think I'm auto-immune, which means I could continue to lose my clearances. THAT is a HUGE blessing!!!
I need to test out rice...maybe get rice tortillas or some thing, so I know if I cleared that.
On a positive note, I put some coconut milk in my smoothie with blueberries and that was to die for!
However, I can't do nuts for 24 hours - including cocoNUT :( sooo I get to stare at my coconut muffins and go back to a normal bland smoothie tomorrow...
It's a journey. It's a rough and tough journey, but I asked her if I'd have a list of what I could/couldn't eat by the end of the year, and she sad absolutely. SO the light is at the end of the tunnel. It's not the end of the world. There IS hope.
My goal is to find out the foods I can/can't eat. Next step: Figure out recipe that include variety (My major problem is I find something I can eat, and I like it, so I eat mass quantities...agh). Then make the food tasty enough so I can host people!
That's 2013's goal. I know it's doable :) And boy do I appreciate the support of my family and friends...I absolutely could not do it with out them. And I'm thankful for God providing for me to have the money to get the food, and giving me this nutritionist who is so awesome...

Thank God for Coconut Flour
...but I will *not* be over-eating this because I do *not* want to develop an allergy to it!! Tonight I tried coconut flour muffins...for 9 muffins, it took 6 eggs! I guess that the flour needs the eggs' help to bind... I threw in some unsweetened coconut shreds, and added some honey. So it's a very lightly sweetened muffin, taken from this blog and I will definitely make them again! Now I will have something to gnosh on when snowshoeing tomorrow... Happy food ending to a frustrating food week :)

Discouraged
So today it's really hit me, and I'm not gonna lie, I'm pretty discouraged with food allergies. I weighed myself this morning, and between my divorce and my food allergies in the past 15 months, I've lost 18 pounds...ok, yay for losing weight! That's the bright side :) However, I think I have made myself sensitive to almond flour. So I *cannot* eat almond flour or almond butter for the next 5 months and will have to retest to see if it's now a true allergy or not. But I've eaten those almond flour muffins I made from the Paleo cookbook, and am incredibly uncomfortable. I tested several times to see if that was what was causing the pain and oh yah. It was. Super super bummed.
I made fish tacos from that book...they were tasty...but I wonder if my version of tasty is what others would like. I made that carrot temulade and while it was good hot, it's not as good cold. People have been making fun of me - in love - at work, and I can totally handle it b/c it's funny, but even my boss grimaced when he tried it b/c of the texture.
I'm single and recipes call for mass quantity and I can't always break it down. So I eat fish tacos for several meals. But I can't keep eating the same thing - I need more variety - so that I don't develop sensitivities. But how do I do that and eat everything up before it goes bad? And still afford it?
Saturday I'm going snowshoeing. I'm tired of trying to figure out foods that I can pack - whether it is for a flight somewhere or for an outdoor adventure - that won't spoil, won't mash, won't require a microwave or a fork, aren't over 3oz's for the plane, are somewhat tasty, and VARIETY (dreaded word there, again).
Anyways, I think I'm sleep deprived so everything looks worse when I'm tired. Just sharing that it kinda sucks and I'm frustrated today.
PLUS food prep takes FOREVER now. Like, I had to make my own mayonnaise so it had things I could eat. Ok maybe vegannaise would work but I didn't have any.
I took my mentee out tonight but I had eaten those muffins so I felt pretty crummy...so that affected my time with her :-/ She was gracious but I mean, ugh.
And then I feel embarassed b/c it's so forefront of my brain, and not on others' so when I talk about it, I feel like I'm so consumed with food and eating and recipes that it's dull to others. So I have to learn how to process on my own and only share minor chunks to not bore others.
Ok that is what is going on in my brain :) Tomorrow will be better. I'm thankful I live in a place where I can get a variety of foods and have a job that allows me to afford these and to afford experimenting with foods. God's still taking care of me :)

Cooking Paleo
Yesterday I slaved in the kitchen, trying new recipes from my paleo cookbook. Carrot Temulate (shredded carrots sauteed with garlic, then pureed with coconut milk, ginger, thyme and some eggs and then baked); brussels sprouts slaw with bacon and pecans; almond flour muffins made with shredded carrots and blueberries and raisins.
Ok. So. One, it was a lot of work, but I'm sure I'll get quicker. Too...since I can't eat apples anymore, I can't use apple cider vinegar, which is what the slaw called for. Let me just say, do NOT sub red wine vinegar. Oh geesh. Now I have a whole bowl of not-so-exciting slaw :) the idea was great...just too tangy!!
Muffins were delicious, tho I ate 4 and started hurting. was that too much fruit? Have I had too much almond butter so can't handle almond flour? Or should I just not eat 4 at once ;) I'm experimenting today - I just ate three. Mighta been hungry b/c I couldn't eat all my lunch. If I look at one more sausage and seaweed noodle dish, I think I might just throw up...
The carrot dish... welll, it was great hot. not as great cold. And let's say my friends...at work...took great joy making fun of me with that one :) I was excited and had my friend sniff it. She nearly gagged. Which made my preggo friend decide there was NO way she was going to try "carrot paste". My boss thought he'd be game for it, but he's open to weird food. So I started thinking hm, maybe my taste buds are desperate.
Or, I'll think of it as they are SO REFINED now that they only can handle the highest quality of natural food...

I'm waiting for my avocados to ripen so I can make stuffed avocado with tuna salad, and then cook up some cod for fish tacos :) That'll be tomorrow.
It's socially hard...Tonight I have a video discussion for my mentoring program and everyone will be eating Chipotle. Guess at least I don't have to worry about having black beans in my teeth. I've been invited to Happy Hour next week. I miss out on other social get togethers b/c someties it just really sucks to sit there and not be able to eat or drink what everyone else is having. And sometimes, I just really get tired of gnoshing on a sweet potato, which is like the only portable snack I can think of that won't spoil. Sigh. I'm sure I'll get more creative eventually. Once I know my full list.
In the meantime...I'm cooking salmon for dinner and have figured out that the George Foreman grill is my BFF, and garlic powder, onion powder, salt and olive oil are a terrific combination...since,you know, my taste buds are highly refined ;)

Eliminating things...
This past weekend I got to go meet my 4 week old niece! Fantastic. My bro and sister in law were fantastic with the food and so gracious to pick up things I could eat ahead of time. I learned my lesson, however. I love green apples and almond butter so much that I may have had 5 apples in 36 hours. I was warned to eat only one a day, but I thought b/c I was cleared for sugar, that my body could handle more. And I wanted to eat them. So there.
So there is right. My nutritionist just came and I asked her about it...guess who is having a problem with apples? it's an immune reaction, which is the most serious. I can't eat apples, grapes or strawberries for 5 months. I can test again, and if I react again, then they're out permanently. I think this all started b/c last week I had a spinach and strawberry salad, which was delicious. But I noticed a reaction and didn't know why. Umm, there we go.
Along with that, spinach was making me gassy...so she tested and yup, that's in the same boat - test again in 5 months :-/ Goodbye spinach and romaine... Sigh.
Chocolate has consistently gone through my system within 30 minutes. Like, run to the bathroom NOW. Um, pretty sure that means that's gone.
she cleared me for grains today, which she anticipated as being difficult but it cleared...we'll see...
I'm disappointed on these foods...but it'll be ok. I wonder if I'll have a reaction to cashews - forgot to ask her that. I have eaten a lot recently and yesterday on my flight home, when my plane was delayed for a few hours, I ate an apple and tons of cashews. And did.not.feel.well. :-/
the good news is, she told me that eventually I WILL get a list of permanent "do not eat" and I won't have to keep testing things and finding out the hard way. This is just the journey to get there. So...ok...good to know there is a light at the end of the tunnel.
I geuss once I figure out all the foods for sure, then I'll figure out how to make sure I have all hte right nutrients, and how to cook food. Then I'll finally be at a place where I'll know how to cook for others so that they like them.
This week, I'm trying fish tacos, some sort of carrot temulade or something, some muffins and a brussel sprouts slaw from my paleo cookbook...will let you know how that works out!! :)

Romaine Lettuce
I feel like I'm back to square one, in that my nutritionist talks and I comprehend about 10% of what she says...I mentioned to her tonight how I had a salad and then instantly bloated and got the runs. She checked me, and I have an immune reaction to Romaine Lettuce. Who would think?! So that means that is off my list for good.
So I didn't quite understand the difference between immune reaction and allergy and sensitivity. Basically, Immune is the worst...your body is attacking itself when you eat this substance and it can lead to other immune disorders (lupus, diabetes, RA, etc).
I'm contemplating going to school to become a nutritionist now...this is fascinating...She checked my clearance for eggs, which held. I told her how i ate the scones and felt yucky, and she went down my recipe book for the ingredients in the scones, and my body doesn't like grapeseed oil! I love that I can feel instantly when something isn't right.
I'm going to take two blood tests that will help me with more info. One will check cross-reactive substances. So for instance, if I know I'm allergic to gluten, but my body is treating quinoa like gluten, but I'm not avoiding quinoa b/c I think it's fine, I just don't realize that my body internally is still causing inflammation and fighting quinoa. So Ill never fully be fixed if I'm eating items that are cross-reactive.
The second test will determine where my body holds the autoimmune aspects of inflammation. For my doctor, it's her ovaries, which explains why she has really bad periods. If she eats something bad that month, it'll manifest itself in her menstrual cycle. So that makes her being even stricter with what she eats. I think, for me, that it has to be something with my muscles/joints. Those are weak and painful for me. She mentioned that it can take months to get gluten totally out of my system.
She said that I feel reactions immediately to what I eat b/c I've reset my immune system. Seventy percent of my immune system is in my intestines. Once those are not inflamed anymore, it can work as it's designed to...and therefore tell me immediately when it doesn't like something I put in my body.

How I'm feeling
Ok I just have to say how amazing it is how in tune to my body I am. My 4 week diet officially is over on Sunday... Last night I ate a salad - green leaf lettuce, roasted cashews, strawberries and craisins, and a dressing of olive oil, apple cider vinegar, sesame seeds and poppy seeds. I've had everything but the strawberreis and green leaf lettuce already. Pretty instantaneously i got gassy and then had to run to the bathroom...amazing how quickly my system is affected! Which is great - I can pinpoint better what is affecting me.
Overall, I feel very healthy. Never too full, never heavy. Yah, I've gotten bored with my food but starting next week (next grocery trip!) I'll be cooking from my new Paleo cookbook so will have variety.
I'm really thankful that my body is taking this well...I know people who have been further along in the leaky gut problem, and things aren't as quickly healed, or more things are off their lists permanently, or their clearances don't keep as long. CHOCOLATE
Oh my gosh I can eat chocolate now! There is apparently a brand called Enjoy Life, that I can eat. Guess who is going to the grocery store tonight?! This very ecstatic girl :)
I just had the nutritionist over. She cleared me for eggs, which means in 24 hours I can make my scones...*happy dance*...and have something different for breakfast now too!
I held my clearing for sugar, which is why I can eat an apple and almond butter now without having pain. That's great.
And I asked her if nightshades were inflammatory and therefore something I should tend to stay away from...that is tomatoes, potatoes, egg plant and peppers. She said yes, there is something produced in them that causes internal inflammation. Ok...good to know...it won't hurt if I eat them once in awhile but I won't keep them in my diet long term.
I also bought a Paleo Cookbook...since pretty soon here I'll have most necessary things back in my diet (once eggs are cleared in 24 hours) and that has SO many new recipes, I can't even stand it! I'm so burnt out on sausage, sea weed noodles, sweet potatoes and spaghetti squash. Thankful for them, but so over them :)
I feel so happy and encouraged and excited. And next Sunday is the end of my 4 week diet to repair/restore...so mile markers are happening! I'm totally noticing differences too...which is a blessing. I'm so thankful God is using my nutritionist to heal me...and that I have food to eat :)

I also bought a Paleo Cookbook...since pretty soon here I'll have most necessary things back in my diet (once eggs are cleared in 24 hours) and that has SO many new recipes, I can't even stand it! I'm so burnt out on sausage, sea weed noodles, sweet potatoes and spaghetti squash. Thankful for them, but so over them :)
I feel so happy and encouraged and excited. And next Sunday is the end of my 4 week diet to repair/restore...so mile markers are happening! I'm totally noticing differences too...which is a blessing. I'm so thankful God is using my nutritionist to heal me...and that I have food to eat :)
Sooo....bring on the chocolate ;)

Good and Bad
Good: This past weekend I had the best meal in months. I snowshoed with friends to a yurt where they served a 4 course gourmet meal...by candlelight...and totally worked with my food allergies! They eliminated gluten and corn at least. I had a little rice in the crackers and some dairy. But, I only hurt for an hour afterwards! Compared to hurting for 36 hours ... that is such an improvement!!
Bad: I took the girl I mentor out for fro-yo tonight and usually I dont' eat anything...but tonight she asked me what I was getting. I didn't want to give a 6th grader an eating disorder and it's no fun to eat by yourself so I got a very tiny amt of gluten free yogurt with fruit for a topping. I knew it would have corn syrup in it, but i chanced it. Idiot. I'm in so much pain. My hands and feet are hurting and I have the worst stomach ache (new). So...compared to eating rice, which was just an intolerance, this corn syrup, being a major allergy, is killer. Never. Again. AGH.
