So I have this whole wheat flour to use up. I have some yeast packets and instant oatmeal to use up. So, I decided, let's make homemade oatmeal bread for my friends! Use up some stuff, remind myself I know how to cook, bless others with food.
Sounds like a great idea right?
Uh...except that for the last hour or so I've had a hard time breathing. I was like, was it my apple I ate? Was it the almond butter? Was it the new cinnamon scentsy I put on (ok maybe that plays a big factor)....but anyways, I'm kinda wondering if the airborne flour and oats is affecting my breathing?? I haven't tried making bread since being on this detox. I know that I'm supposed to be very hypersensitive to any changes in my body as a result of the detox...so, that makes me think it's a strong possibility that my body is not super happy with me having airborne flour and oats floating around...ok, good thing I'm using up a lot of it ;) Just gotta make it through the next few hours til it's baked.
Then, the past week or so I've rediscovered granny smith apples and almond butter...as previously confessed to...hey, guess who has been having some pain?? So my nutritionist came over today and was like whoa there, don't eat two apples a day! That's too much sugar for your body! Only have one piece of fruit total per day! Okaaaay. There goes my apples and almond butter. So she cleared me for sugars and now I have to wait 24 hours before eating anything sugary. Not that I thought green apples were all that sweet...! But she said just to do one piece of fruit a day and focus on veggies.
I asked her about how my toes and fingers were burning and hurting again, and she said that it's my body's way of saying, whoa there, too much, don't like. I haven't "ruined" anything, but I need to severely cut back.
She also said that the vitamin shakes I'm taking...are like a very strong and healthy dose of a multi vitamin. She said I'll probably want to keep taking it in all honesty afterwards. It gives me more nutrients and minerals than any multi vitamin, and in quantities that are so much better for me. Hmm...
So I guess my body is more sensitive to things it doesn't like than I thought. Guess I have sensitivities to dog...perfume, flowers, feathers and formaldehyde. I guess I can get cleared for those so it's not serious. She said b/c I'm not at the auto immune stage, once I get cleared, there is a strong possibility I won't have to clear myself again. Whereas her sensitivities lie in her ovaries, so every month she has to reclear herself. Agh!!
She also said there is a good chance I won't be introducing dairy back into my diet...those who are allergic to gluten are also often allergic to dairy b/c the makeup is very similar...darn. I do love cheese... :(
So overall, I guess this is the diet I'll be eating the rest of my life. Certainly adding more things in...I got my clearances tested for tomatoes and potatoes and other nightshades, and it held, so I can add those back in.
I don't mind being sensitive to food reactions - as in, knowing immediately if something I eat is not good for me. I think the diet overall is healthy. I think I'll eventually figure out how to cook tasty foods that have variety. It's probably leaning more towards the Paleo diet. I'm nervous to cook for people now b/c my taste buds have changed. I'm ok with eating whatever food I can, pretty much regardless of taste. Others don't have that dull of taste buds ;) Also, I can't sample what I bake to make sure it's tasty!
Anyways, just the latest on this journey! Overall I'm feeling great tho. Just going to stay away from so many apples... :)

Extended Travel, with food allergies
ok...so I travelled to California this past week for 5 days, with food allergies. And I didn't die of starvation. Helps that 1) my mom supports me with eating the right way and 2) that I stayed in someone's house with a microwave and oven.
I only caused major drama once, much to my embarassment.... the restaurant that all 15 of us were eating at served old fish, which was really stinky. Fish isn't supposed to smell, and when my cousin who ordered the same thing leaned over to me and mentioned how it smelled like the dog's breath at the house we were staying at, I laughed so hard I cried. But then really couldn't eat the fish. I tried one bite. But it was disgusting. The vegetables had nothing on them. Solely steamed. Ok, I asked for that...but like, I dumped clearly not enough salt on them, and they were still flavorless. I didn't mean to make a big stink, but it turned into one, and I returned my plate of food. I ate when I got home.
I found that I ate every few hours b/c I didn't know when I would eat next...so in this case, that was good, since I had just eaten a few hours before.
It was torturous tho, since the reason for travel was my grandma's passing...So people brought all sorts of delicious-smelling foods and desserts to the house. My willpower was tested and I might have felt very annoyed and frustrated at times that I have food allergies :( But it was short lived - I'm home now, back in my routine, and I'm glad I didn't cave and suffer the pain and have to start all over.
I missed my Vitamix to blend up the pea protein shakes I had twice a day...but I still drank them...I was very glad I had cooked up tons of quinoa ahead of time - that became a staple, with black beans and avocados and some zucchini. I cooked up sweet potatoes and spaghetti squash, and devoured uh, maybe a jar and a half of almond butter with granny smith apples (major weakness). So I ate :)
Astonishing realization today - I had bought two large cans of tuna for the week - and was going to take them home when I read the label...who would think that you would have to read the label of tuna that says "Tuna in water"...but apparently it's tuna, water, salt, and vegetable broth that is soy based...which I can't have soy (it's GMO) soo there went that deceptive tuna! (You're welcome Becca! ;))
Anyways, I survived a 5 day trip, still on track with my diet. Several cousins have different food allergies/intolerances/experiments, so by the end of the week, we all decided we were SO over talking about food. It came up so often b/c it's a common ground that we're all working on understanding..but we hashed it out so much, there was nothing left to hash out..
Half way through this 21 day diet. Can't wait...cannnn nooooot waaaait :) But I'm feeling well.

Crackers!
I found a cracker I can eat! It's expensive but just the fact that I can bite into a cracker is so wonderful. Livin' Spoonful Sunny Garden Herb. So delish...totally exciting :)
I walked up and down Sprouts and looked in Vitamin Cottage for some chocolate without sugar or something I could fix a sweet tooth :( NADA. I was so sad. I hate grocery shopping. Everything is such a big decision.
But I came home and ate a granny smith apple with almond butter--- loooove. So happy ending :)

Date with Allergies
So...I've commented to various people that it'll really show if a guy is worth it, if I get asked out on a date and he can work with my food allergies....
I got asked out on a date...and he already was aware that I had some allergies but didn't know to what extent. So he took me to a restaurant that had good salads, and figured I could at least have a salad...I was impressed!
So I had a salmon salad, held the cheese, tomatoes and candied pecans. Barely drizzled on the dressing (it said balsamic vinegar but who wants to bet there was corn syrup in there?!) and ate the craisins which I probably shouldn't have on this latest detox, but so far I'm not feeling any side effects....
So, happy to report I can actually go on a date with all these crazy eating restrictions and someone didn't think I was high maintenance by talking to the waitress and telling her to hold all these things! :)
On another note, I went ice climbing yesterday too...and had two sausages for breakfast (not a fan of the apple flavored ones...which I unfortunately bought 3 packs of...sigh) but they held me over til lunch...in the car back...when I ate 2 nectarines and a sweet potato. Who gnoshes on a sweet potato as you drive down the freeway?! HA! Anyways. It worked.
But it is amazing how much my life revolves around food and it's so stressful. Like, this morning, I'm already really hungry but the thought of sausages doesn't appeal to me, but I need to eat. Then I'm realizing I need to grocery shop for this week and think through food ideas so I'm ready for the week. But that sounds overwhelming to me.
Good news is I'm on the 21 day detox and can have more food in my body. I like that it's keeping me skinny, but it's really hard. It really consumes my every day thoughts and that can be exhausting.
People ask if I feel better...It's a weird question b/c I won't know until I eat a bad food...I mean, I feel good...I feel healthy and light weight...I though I was having problems with apples but am not sure now that that was really a trigger...I probably should have had some sort of pain after the balsamic vinegarette that I had last night that probably had corn syrup in it and I didn't have pain, so surely that is a sign of improvement?

Tomorrow is the last day of the 5 day diet!
The marks of success come in little increments. Tomorrow I will make it through the 5 day diet. Then onto the 21 day diet. I have had a really rough time this week. I have wanted food I can't eat like no other. Namely fondue, rice crispy treats and Valentine's Day candy.
However...<tongue in cheek>...I ate seaweed noodles today... LOL Actually, they were really good. I had some cooked sausage on them and they were great. My boss was curious so tried some...his comment was they're good!...I can hear them crunching in my head! LOL he's like, I know you're tired of the sausage since you eat it every day, but really, that's some goooood sausage. :)
I have a good support network of friends that sit around me at work. Even tho everyone brings in tons of food, they adamantly tell me how terrible it tastes so I won't long for it. I know they're lying but I sure appreciate the gesture :)
Saturday I go ice climbing. I'm SO thankful I can add quinoa, beans and nuts into my diet. Give me something to eat ... it's not like I'll be hanging on to the ice with a pick, below freezing, being like hey guys, I'm hungry, let me gnosh on some...spaghetti squash with spinach. MMM sooo appetizing, that fills me right up! :) LOL Guess it'll be beans and quinoa and some fruit. Energy, protein?
I do need to figure out some thing else to eat for breakfast. If my body doesn't like dairy, there goes yogurt. Cereal was already out, and so are eggs now. So if I got creative, I guess I could make almond four pancakes, but I'm supposed to limit my sugar. So for the next 3 weeks it'll be sausages allllll the way...LOL
This week I'll try a new flavor of the sausages - it adds apple, so this will be my first introduction of apple back into my body. So far my body has handled olive oil reintroduction well...I'm thankful for that!
Anyways Happy Valentine's Day :) I'm so thankful for the people who love me and support me through this trial! And thankful God has given me solutions and support for all of this.

Clearing some allergies
So the nutritionist came back today and checked my clearances for fruits and vegetables...she can only clear one thing each 24 hours. So they stuck, which means that if my Repair Vite diet says I can have, let's say butternut squash, and ALCAT said I had a sensitivity to it, I wouldn't be able to eat it. But she cleared me, so I'm able to now. Which is good b/c that brings more food in that I can eat. I've been blueberries and saurerkraut, sausage and spaghetti squash like there is no tomorrow. LOL They're not bad foods but I'm a little tired of them already :-/ And I'm really craving rice crispy treats. I blame my coworkers, who for some reason decided to talk about these this week...
I'm excited b/c I'll be so cleared after this week that I'll be really sensitive to how any food affects me.
So tonight she tested me for some more things. Apparently I'm really sensitive b/c my "no" muscle kept getting switched off, so we had to use her as a surrogate - she grabbed my arm, and I asked the questions and tried to push her arm down (yes if it went down, no if it didn't). Weird, but cool.
So we found out that I can't do anchovies (gee, darn! :)), beef, chicken EGGS (but chicken is ok), pork, ALL dairy (good bye cheese, I miss you so much!), corn, and oats. These are all things that should be able to be cleared...except for we decided Rice and Beef were probably going to be really hard to clear, possibly a permanent allergy, as well as Dairy. And she said most likely I'm permanently allergic to gluten.
So, I ate a big chunk of salmon for dinner and a small sweet potato and my stomach thinks it's still hungry. It's pretty hard to want to eat other things and not be able to.
Oh yah, she also tested for nightshades and cleared those, so in 24 hours I should be able to test them out (nightshades are potatoes, tomatoes, stuff like that). Thing is, I can only try one new food for 3 days...if I don't have any bad feelings (cramping, headaches, any reaction whatsoever) then I can continue it. Otherwise I have to remove it from my diet and try again in 5 months. If it doesn't pass then, then I can't have it ever again.
What a weird journey. All I know is I'm hungry and need to find something else to eat before I run out the door.
This is definitely affecting my social life. I'm mentoring a 6th grader and I feel boring when we go out to dinner and I don't eat anything. Then tonight I'm supposed to have Bible study but it's our social night at a restaurant, and I'm going to be hungry, but not able to eat, and sometimes it's just hard to sit around food you can't eat. I have willpower now - thank God - but it only goes so far :-/
Then I'm already thinking ahead to ice climbing this weekend and girls' night with my friend Janna on Friday. I mean, what do I bring to eat? That will taste good, and hold up on an ice climbing trip? UGH.

Detox
So yesterday I started the detox diet...the 5 day diet. Had the shake twice a day, and could only eat a certain list of food...so had sausage for breakfast, blueberries, pomegranate seeds, sausage and sweet potato and sauerkraut. No coffee...I used to only drink one cup a day so didn't think I was that addicted. Got a headache...which gradually increased...until about 2pm when it started to turn into a migraine. I had to go get a Hep A vaccine b/c I'm going overseas in a few months and it was all I could do to focus and not throw up. I don't usually get nauseous with a migraine...I stumbled through the doctor's appt, got in my car and started gagging. It was all I could do to make it 10 minutes home, where I grabbed a garbage can and curled into bed at 3pm...threw up...rolled around in major pain from my headache and tried so hard to not take medicine. I slept for four hours, woke up not feeling nauseous finally, took my second shake and started feeling poorly again. Couldn't shake the headache, broke down and took two Advil, and slept til 4:30. So, about 12 hours of laying in bed, 2 Advil later, i feel better. I'm a little nervous to take the shake again. I hope that's not what is making me nauseous. I don't want a migraine at work either. Hopefully today I start feeling better? The nutritionist is coming over today to check on how the detox is going. I never thought I"d really suffer from detox. I blame the caffeine. I'm never drinking coffee again if this is what happens on one day without it!

So it continues
The nutritionist came back to my house tonight. On Wednesday, she cleared me for vegetables...meaning that supposedly I'd be able to eat the veggies on my ALCAT test results that I'm sensitive to, but not allergic to. So today she "tested" to make sure it kept...which it did. So, supposedly, I can now eat the veggies...she cleared me for the fruits today ($30 each time...but not bad) She brought me the supplements so I plan to start my 5 day repairVite on Monday...I'd start tomorrow but I have a motorcycle class to get my lesson all day Sat and Sun and I kinda want caffeine to stay alert since it's early and will be snowy/cold.
I went to the grocery store tonight and well, let's just say grocery stores are hard!! I finally found pastured raised eggs at Vitamin Cottage. Not even Sprouts carried them. They were $6.39 for a dozen tho!!! I looked at the Applegate farms meat and it said vegetarian fed...which I took to mean included corn. I asked the nutritionist and she said no, it's fine, I can eat that...so might go back and get some so that I don't eat all dozen eggs in 3 days :)
I also found kelp noodles!! I have heard that seaweed is so good for you. They look like wet rice noodles. I'm not sure how I'll prepare them...but I can try something new!
I looked at all the wild meat and decided on bison that was 100% grass fed since I can't have beef from my ALCAT results, and other stuff I thought could have been organic but still corn fed.
I even had the option to eat rabbit...haha...who knows what I'll end up experimenting with!
The nutritionist also brought me liquid magnesium and tested my body again for it, which my body said yes I wanted it and 2 tsp/day. So I put it under my tongue and hopefully it absorbed quick enough!
Since I don't want to be gnawing on celery and green leaf lettuce at my motorcycle class tomorrow (how hot is that?!) I'm making my chocolate chip scones with almond flour...my faaaavorite food right now...and will feel slightly cooler eating that ;)
Anyways...so the journey continues! I'll be curious what Monday brings...starting work at 0630 with no caffeine and limited food...woot woot! :) If this is the path to recovery, praise the Lord, I'm all on it!!

*Unbelievable* = HOPE!!!
I have no idea where to even start this post, and fully know it will be rambling as I process what this new doctor just said. I'm completely speechless. And SO EXCITED!
First off, Christi Mintz-Lasher is a master nutritionist at the Denver Allergy Clinic. She made a home visit (which saved money!!) and I think I retained only about 10% of the knowledge she imparted. I'm totally like, blown away.
She started off with a diagram to explain leaky gut to me. She said a LOT of people are walking around with it right now, which makes total sense to me. From the environmental stressors everyone experiences, to medicines that break down the gut, to lots of different factors, a lot of people are faced with this in life and consequently we develop a leaky gut. The stressors put stress on the adrenal glands, which affects the leaky gut too. She showed me a picture of the little thingies that line my gut and are normally tight together. They collect the food, digest it and push it into the blood stream. When there is inflammation from stressors, the "thingies" are no longer tight next to each other and therefore whole food particles can get into the blood stream. The body reacts and fights these off and develops a memory when it continues to absorb the same particles. It develops an antibody to fight it, which creates a food sensitivity.
Something she pointed out was that food sensitivities manifest themselves in 3 ways - digestive tract, skin, or brain... and that they start off as irritants, then become sensitivities, then become allergies, then run into autoimmune issues (celiacs, diabetes, etc)...and can lead to the brain (ie, dementia, etc) That's pretty scary, honestly, but makes sense too b/c of all the issues we have going on in our society.
As a side note, I made a comment that I was wanting to limit the amount of meat/animal products in my diet b/c I had heard that there was a correlation between that and cancer. She said if I get pasture raised chicken/eggs and grass fed beef, that is ok to eat. The other stuff is fed grains, which cause inflammation. Inflammation is what causes cancer! She told me to stay away from oatmeal (which I'd been eating for breakfast) because those who are allergic to gluten are often allergic to oats (and dairy, oddly enough!) (as a side note, she said Applegate Farms is really good sausage and deli meats..and for eggs, we're supposed to get eggs with an orange yolk. That has more nutrients than the yellow yolk...)
She also said to stay far away from soy. All soy in the US is genetically modified and that is SO bad for us. She repeated to stay away from soy.
She told me to get protein in every meal to help me feel full and b/c that was important to have it..so, ok...whether it's animal protein or legumes, I'll try to do a better job of that. She said to drink half my weight in water a day...ok...will up it a bit...She pointed out that sugar is toxic...strong words, but I know I feel bloated and completely nasty when I eat sugar (but it tastes so good!) She told me to stay away from fruits on the high glycemic index (i.e., bananas, pineapple .. sad...) b/c this spikes my blood sugar levels so my body goes high, then low, then high, then low. That's partly why I may have trouble falling asleep at night - my body is so used to going on these highs and lows, fighting off the spikes, that it overproduced cortisol last, so it has to over compensate and produce adrenaline, which is why i can't fall asleep at night...definitely sounds like it could make sense. That's why it's important to eat small meals every few hours - keep myself even keeled and not spiking.
Another side note (told you'd I'd be all over the place)...she said that depending on your blood type depends on if you should be vegan or not... I'm an O+ I think, and she said O's are meant to eat meat. She's an A+ and isn't supposed to eat meat, but she likes it, so she has to take some sort of acid when she eats meat so that she can digest it... This is where I was like hm, this is outside my comfort zone, it sounds kinda wierd...but just b/c it's not western medicine doesn't mean it's not true...just keeping my eyes open.

Have you ever had muscle testing? A friend at work told me about it and said someone in her church does it...this lady who tested me goes to a Lutheran church..I'm like, ok...let's give it a shot. It sounds so far fetched. I know this, I know this. BUT IT WORKS AND IS SO SO CRAZY.
So I held my arm out and held a bottle of the pills that the other doctor had given me. This lady quietly in her head asked my body if I liked the pills (keep reading! I know this is wierd!!!) and then she would push my arm down. If my arm went down, it was a yes; if I could resist her pushing down, it was a not. *I could not control it* I "lost" my energy at one point and so she had to rub my chest ribs and stomach to recenter my energy and then I got my "yes/no" back. Can't explain it; she told me I was sensitive...which I already know that I am sensitive to side effects of medicines...so maybe that makes sense?
Anyways, she went through the list of pills the doctor previously had given me. Three of the bottles my body did not like and in effect, one of them triggered me to lose my yes/no arm strength. So I'll stay on the regimen with the pills - except those three bottles - til she starts me on her regimen on Saturday.
As a Christian, I was totally weirded out about the energy thing. I kept praying the whole time that Jesus would protect me, and sometimes I wonder if in our Western culture we think pills is the only way to go...yet, could God, Who created energy in people, have also created ways for us to get healed with energy? I mean...why not? Still praying about this...cuz it's so weird...but...I do think people have an energy about them - you can tell when someone walks in a room and it's negative energy, or positive energy. I dont' mean that in a new age way...just...think about it...I've learned you can kinda feel it.
The last thing she did for me was "clear" me of a few food things that were sensitivities, not allergies...so, less of an issue but I was still supposed to avoid them... and that was super bizarre too...stay with me for a second. She had these vials that represented the major organs and then a vial that represented the global blood type. So she beat upon my spine and then did accupuncture on my elbows, hands and feet while I held the vials. This is so weird it's embarassing to write about. Anyways, she said it cleared me of the vegetables I"m not supposed to eat; I wait 24 hours and then she'll retest me on Friday and if I'm clear, then I can eat those.
This is part of the journey...I'll keep you posted...but I feel hopeful...She's giving me the first vita-shake thing on Friday, when she gets a new order in (and I get paid!) so I'll start the first round on Saturday. It's 5 days of drinking this shake once a day, and only eating a few things that there are no known allergies to...ie, lots of veggies. This heals my leaky gut in one day, but they do it for 5 to make sure that it's fully restored.
Then I go on a 21 day shake...and add a few things into my diet but this centers my digestive tract again I think? So it rebalances everything, and after that I can add things in, one at a time. If I don't react for 3 days, then it's safe. If I do react, then I keep it out for 5 months and add it back in to try again in 5 months. If I still react, then it's gone for good; otherwise, I can have it again.
She said too that if I get leaky gut in the future - which is possible with stressors- that I just have to do the 5 day cleanse diet to repair it, and get back on a normal eating routine.
She said I'l feel so good after this tho, that I'll probably keep a similarly healthy diet.
OK so that was my disjointed rambling commentary on today's doctor's appt.
In summary, I wouldn't have taken the $1150 ALCAT test or the leaky gut test ($100). I wouldn't have gone to the first doctor ($300) and spent all that money on the supplements ($600). I would have gone straight to this doctor ($120) and taken her shakes ($150 for the *entire 4 weeks*).
Ok, so people, please learn from me. Watch me as I go through this. I think this is the right path finally.
Just need to pray for wisdom b/c I'm not willing to do this if it's off spiritually...so I'll research some things...the Clearings are NAET Allergy Elimination Clearings if you want to look them up online. I'm going to research muscle testings too. Just to see what I'm getting myself into.
My friend at Bible study, who also has allergies, she and I were prayed over last night for healing, so I'm excited to see God using this and working the healing!
First off, Christi Mintz-Lasher is a master nutritionist at the Denver Allergy Clinic. She made a home visit (which saved money!!) and I think I retained only about 10% of the knowledge she imparted. I'm totally like, blown away.
She started off with a diagram to explain leaky gut to me. She said a LOT of people are walking around with it right now, which makes total sense to me. From the environmental stressors everyone experiences, to medicines that break down the gut, to lots of different factors, a lot of people are faced with this in life and consequently we develop a leaky gut. The stressors put stress on the adrenal glands, which affects the leaky gut too. She showed me a picture of the little thingies that line my gut and are normally tight together. They collect the food, digest it and push it into the blood stream.
